Breakfast Burrito

Well, MMR (multitasking Mr.) has been cooking up a storm lately.  He’s been spending more time in the kitchen and I’m reaping all of the rewards.  😉  He’s cooked a few different things, but there’s one that we now can’t live without.  You can usually find tortillas in my home, but lately this is what we’ve been filling them with.  This breakfast burrito mix is so hearty and filling.  It’s perfect for a hearty breakfast or a quick meal.  Without further ado, this is my new favorite breakfast:

Breakfast Burrito

1 Cup Diced Green Peppers
2 Medium Grated Potatoes
1/2 Cup Diced Onions
6 Eggs
1/2 TBSP Salt
1/2 TBSP Pepper
2 Cloves Minced Garlic
1/2 Cup Cheddar Cheese
Tortilla Shells

 First, assemble all your ingredients and get chopping.  Once all of your veggies are chopped then put the onions, green peppers, and potatoes in the pan and sautée until softened over medium heat (approx. 10 minutes).  Once softened, add in the eggs, salt, pepper, garlic, and cheese.  Cook until the eggs are solidified, approx. 5-8 minutes.  Make sure to stir everything up while it’s cooking.  Once cooked, put the mix in a tortilla, roll it up, and enjoy!
